Rest assured, a law school that accepts you as a student won't be accepting you into their Construction Law Program or their Environmental Law Program or their Criminal Law Program. You may, however, have a background that would give you a leg up on other attorneys specializing in areas that relate to your undergrad degree--perhaps construction, if that's your focus, or environmental or land use. That said, if your passion were bankruptcy, no one's saying you couldn't go in that direction, regardless of your undergraduate major. (And your background might come more into play if you had several years of job experience to back up your degree rather than coming directly out of undergrad.)
Other thoughts on this subject: Going to a great law school (Yale, Harvard, Stanford, Berkeley, Pennsylvania, Columbia, Chicago, New York, Michigan-Ann Arbor, etc.) is going to do more for you than going to a school that specializes in (or says it specializes in) construction only. And think about national names vs. local, vis a vis where you plan to practice.
Another thing to consider: Construction law, right now, is going to be really slow (I'm guessing). Construction and real estate just aren't big business the way they were three-five years ago. (In fact, they are dead!) On the other hand, you wouldn't be graduating from law school for another four years, at least, but the big-picture job availability is of course important. Contract lawyers do much more than just read contracts and look for mistakes, but first, know that in law school, contracts is just one of many many different courses that you have to take (and pass) to satisfy the requirements for a law degree (and eventually to get a license to practice law).
Contract lawyers read, interpret, draft/create, and look for mistakes, but also look for loopholes, different interpretations of terms and conditions, construction and language issues throughout, but that's just the start. They look at formation, consideration, statute of frauds, defenses to contract formation, performance under the contract (or lack thereof), any excuses for non-performance, breach of contract, third party issues, and the various remedies available.
They also either sue to enforce the terms and conditions in a contract, but also to defend against them for many different reasons. It really depends on what type of contract law that you do as to how much litigation there may be involved, because as you know, there are different contracts for different things (Landlord Tenant, Real Estate, goods, services etc.). In addition, just because it's not in writing does not mean that there isn't a contract. Many oral contracts are enforceable as well.

There are two separate issues involved here. One is a bar ethics question which does not really give relief to a defendant. Depending on the rules in a particular state, the DA and the defense attorney may be subject to discipline for not withdrawing from the case.
The separate issue is whether defendant received ineffective assistance of counsel. I do not believe that the fact that the defense attorney was having an affair with the DA would result in an automatic finding of ineffective assistance of counsel. However, it could be evidence tending to demonstrate that the failure to take certain steps during the defense of the case was for illegitimate reasons rather than justifiable reasons.
In most states, there is a mechanism for raising claims of ineffective assistance on appeal or in a "collateral review." If you know the defendant and you believe that there was such an affair, you should contact his appellate attorney and have him discuss this issue with the defendant so that they can determine how to best raise it. If he is still represented by the same attorney, he needs to get a new one.
